Bacon & Veggie Breakfast Muffins

Easy and nutritious -- the perfect breakfast meal for the busy person.
Ingredients
  • 5 eggs
  • 1 cup of Bisquick
  • 8-12 strips of bacon, cooked and chopped
  • ½ red onion, chopped,
  • 1 orange bell pepper, chopped
  • ½ tbsp Italian seasoning
  • ½ cup of cheese, grated
Instructions
  1. Preheat the oven to 350'F
  2. Whisk the eggs together in a medium bowl. Add the cup of bisquick.
  3. Add the bacon, red onion, bell pepper, and Italian seasoning.
  4. Pour mixture into greased (but not lined) muffin cups. Top with the shredded cheese.
  5. Cook in the oven for 20 min.
Notes
To reheat, zap in the microwave for 30 seconds
