Folks, I woke up this morning just KNOWING today was going to be good.
Why, do you ask?
Not only because it is my last day of my Music History One summer class (!!), but also because I knew what I was having for breakfast.
Ice Cream. Made out of bananas.
I LOVE ice cream, you guys. And chocolate. And… well, just food in general. So does my friend who told me today that she used to eat chocolate ice cream and Dr. Pepper for breakfast before school. While I’m envious of her childhood days, my adult metabolism would never be able to keep up with that!
Luckily, this ice cream is not only easy to make, but also easy on the body. It utilizes just bananas, vanilla, and whatever flavoring you want. I chose the berries I had on hand, strawberries and blueberries, for one delicious last-day-of-school breakfast.
- 2 frozen ripe bananas
- ¼ tsp vanilla
- ¼ cup berries
- Cut bananas into ½-inch slices and freeze in a ziploc bag
- Blend frozen bananas with the vanilla and berries until there is a uniform consistency. You may need to intermittently stop and stir the contents to make sure everything can be reached by the blades.
That’s all there is to it!
Poco a poco…
Top with whole berries and enjoy! This can serve two people if you accompany it with some toast–I recommend peanut butter toast.
