One of the most popular recipes on my blog is this sausage breakfast muffin, and it’s not hard to see why. It’s extremely quick to make, and extremely quick to reheat… while still being full of flavor. It is the perfect breakfast on the go. This recipe is a mini-frittata muffin style spin off of that original sausage breakfast muffin, and I think you will love it. After all, what could go wrong when bacon is involved!?
The answer, of course, is nothing.
Now for those who regularly check this blog (love y’all) and have been asking me where the newest recipe is, allow me to offer a quick explanation: I recently moved into a new apartment, and started a new job. I love both of these — it’s a beautiful apartment with a backyard (!!!!), and my job is truly a dream. Why does any of this matter, you ask? Simple: my beautiful, spacious, full-of-window space faces due East. In other words… the apartment only gets sunlight from about 7am-12:00 — when I am at work. I cannot even begin to count the number of times I’ve started making a recipe for this blog and by the time I’ve finished, we are entirely in the shadows. And that, my friends, does not make for a good food photograph.
I have finally got a work around solution in the form of an artificial light, but until that comes in, it will be tough going here since I do almost all of my cooking at night!
Why at night? Simple: I, like everyone else, am very busy. Which is what makes this recipe so great. (Do you see what I did there? Teaching every day has gotten my segue’s on point.).
But enough yapping — here’s that recipe.
- 5 eggs
- 1 cup of Bisquick
- 8-12 strips of bacon, cooked and chopped
- ½ red onion, chopped,
- 1 orange bell pepper, chopped
- ½ tbsp Italian seasoning
- ½ cup of cheese, grated
- Preheat the oven to 350'F
- Whisk the eggs together in a medium bowl. Add the cup of bisquick.
- Add the bacon, red onion, bell pepper, and Italian seasoning.
- Pour mixture into greased (but not lined) muffin cups. Top with the shredded cheese.
- Cook in the oven for 20 min.
“We don’t talk anymore” just seems too fitting for a blog post after a long absence! But beyond that, it is one of my favorite songs to jam out to when I’m driving to work eating a quick breakfast. It’s just so. catchy!
